How do you use dried mushrooms?

You first need to rehydrate the dried mushrooms by soaking them in water, the time depends on the species. Also if you use them in a soup for example separate rehydration might not be necessary. The easiest method for rehydrating them is straight in the package. King Oyster Mushrooms and Shiitake: 1-2 hours at room temperature or at least 8 hours in the refrigerator, others 20-30 minutes at room temperature. Alternatively you can rehydrate all mushroom overnight in the fridge, but in that case you should lightly squeeze the excess water out of them before cooking. It is recommended to use or save the rehydration water as it is full of flavor. After rehydration you use them as you would use fresh mushrooms.
